🍊 Orange Cream Cake

Ingredients:

Fruit
2–3 fresh oranges
or
1 tin of orange or mandarin segments
Orange juice — 120ml (½ cup)

For the Cake:

Eggs — 4
Sugar — 150g (¾ cup)
Oil — 80ml (⅓ cup)
Plain flour — 150g (1 cup)
Baking powder — 1½ teaspoons
Vanilla extract — 1 teaspoon
Salt — ¼ teaspoon
Orange zest — 1 teaspoon
For the Frosting
Mascarpone cheese — 200g
Heavy cream — 240ml (1 cup)
Powdered sugar — 60g (¼ cup)
Vanilla extract — 1 teaspoon

Equipment:

Measuring cup size: 240ml
Baking pan: 20 × 20 cm (8 × 8 inch)

🍰 Method

Make the Cake:

In a large bowl, whisk together the eggs, sugar, salt, vanilla extract and orange zest for about 4 minutes, until light and slightly fluffy.
Add the oil and whisk again for about 2 minutes until well combined.
Sift in the flour and baking powder.
Gently fold the mixture until everything is just combined. Do not overmix.
Pour the batter into a lined baking pan.
Bake in a preheated oven at 170°C (350°F) for about 30–35 minutes, or until a skewer inserted into the center comes out clean.
Allow the cake to cool completely.

🍊 Make the Frosting

Add the mascarpone cheese, heavy cream, powdered sugar and vanilla extract into a bowl.
Mix gently with a spoon first, then whisk for about 2 minutes until thick, smooth and creamy.
Cover and refrigerate until the cake has completely cooled.

🍰 Assemble the Cake

Cut the cooled cake into two layers.
Brush both cake layers generously with the orange juice.
Spread a layer of diced orange or mandarin segments over the bottom layer.
Cover with a generous layer of frosting.
Place the second cake layer on top and repeat the same process for the top layer.
Decorate as desired.
Refrigerate the cake for about 1 hour before serving.
