These green chili enchiladas are made with hatch green chili sauce.
Ingredients
1 onion chopped
2 cloves minced garlic
1 red pepper chopped
1 to 2 cups frozen corn
1 cup red lentils
1 15 oz. can fire roasted tomatoes
2 cans hatch green chili enchilada sauce
1 can each pinto and black beans rinsed and drained
1/2 T chili powder
1/2 tsp cumin
1 tsp smoked paprika
1/2 cup nutritional yeast
2 cups water
Instructions
set instant pot to saute feature.
saute onions and garlic in water for a few minutes adding water as needed.
next add bell pepper and saute for a couple of minutes adding water as needed
next cancel saute mode and add all the rest of the ingredients and stir to mix well.
set instant pot for 20 minutes on manual, let steam release naturally.
