Ingredients
1 whole chicken about 4 to 5 pounds spatchcocked
1 stick softened butter
3 tablespoons harissa paste
1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon onion powder, salt and black pepper to taste.
For the vegetables you will need
1 pound baby potatoes cut in half
4 carrots cut into chunks
3 cloves, minced garlic 
1 red onion cut into wedges,
2 bell peppers sliced thick
2 stalks celery sliced
3 tablespoon harissa paste,
salt and black pepper garlic powder, onion powder to taste.
Directions
Preheat oven 425°  In a large bowl toss the potatoes, carrots, onion, and bell peppers with , harissa paste, salt, and black pepper. Spread the vegetables evenly in a large roasting pan or baking sheet. In a small bowl mix the softened butter with the harissa paste, garlic, smoked paprika, onion powder, salt, and black pepper until well combined. Place the chicken on top of the vegetables, Pat the chicken dry with paper towels, then carefully loosen the skin over the breast and thighs. Spread some of the harissa butter under the skin and rub the rest all over the outside of the chicken. Roast in the oven for 55 minutes to 1 hour, or until the internal temperature of the thickest part of the chicken reaches 165 degrees. If the chicken starts to get too dark before it’s fully cooked, loosely cover it with foil. Once done, remove from the oven and let the chicken rest for 10 minutes before carving. Serve the chicken with the roasted vegetables and enjoy.Thanks for watching 🫶🏼
