This Kerala-style beef curry is rich, spicy, and packed with flavour — a recipe passed down from my sister-in-law Kathy, using authentic ingredients and a slow-cooking method that melts the beef to perfection.

🍛 What makes this curry special?
• Coconut oil, curry leaves & lots of shallots
• Fresh ginger & garlic paste for bold flavour
• Marinated stewing beef for 24 hours
• Finished with sliced coconut and South Indian spices
• Slow-cooked for tender, fall-apart meat

📋 Full Ingredients:

1kg diced stewing beef
Coconut oil
Curry leaves
Shallots
Ginger
Garlic
Green chillies
Turmeric
Chilli powder
Coriander powder
Meat masala
Garam masala
Tomato
Diced coconut

🕰️ Marinated overnight, then slow cooked for 4 hours in a crockpot.

👉 Want a beef roast version? Just reduce it further on the stove for a drier, roast-style finish.
