If you want to eat green curry like a Thai, try it with kanom jeen! Kanom jeen is fresh rice noodles that we serve with various kinds of sauces, one of which is green curry with chicken. They can sometimes be fermented, in which case there’d be a very subtle sour taste to them.
Here you can use dried Vietnamese rice vermicelli or Japanese somen noodles. In the video I used a Thai dried kanom jeen product made for export, but weirdly made from wheat so they ended up tasting like somen. But feel free to try it with any kind of noodles you have
