Learn to Cook the Mexican Way in 30 Minutes

Sit down, mija, because I am going to save you about ten years. That is how long it took me to learn what I am giving you in thirty minutes, and only because nobody ever sat me down and said it plainly. My mother did not teach recipes. She taught five things, without ever saying she was teaching, and every dish I have made in my life sits on those five like a house on its foundation. In the next thirty minutes we cook five things together: a pot of beans, a pot of rice, a salsa, tortillas, and eggs. Each one teaches one law. By the time the eggs are on the plate you will not know five recipes. You will know how a Mexican kitchen THINKS, and every recipe you ever read after this, mine included, will make sense for the first time.

⭐ THE FIVE LAWS (write them on the inside of your cupboard door)
1. SALT FROM THE START. Inside the food while it cooks, never sprinkled on after.
2. FRY FIRST, THEN TRUST THE POT. Dry heat before liquid, then leave it alone.
3. FIRE IS AN INGREDIENT. Char, roast, toast, tatemar. Water only softens; fire adds.
4. THE DOUGH TELLS YOU. Cracks means thirsty, sticks means wet, earlobe means go.
5. LOW, AND FAT CARRIES SOMETHING. Gentle heat, and never serve an egg naked.

⭐ WHAT WE COOK, AND THE ONE THING EACH TEACHES
CHAPTER 1, THE BEANS (frijoles de la olla). 1 lb pinto beans rinsed · water to cover by 3 in · 1/2 white onion in one piece · 3 whole garlic cloves · 1 generous Tbsp manteca IN the water · 1 Tbsp salt AT THE START. Lowest simmer, lid slightly off, 2 to 3 hours. The pot whispers, never boils. Acid WAITS until they are soft. Never throw away the broth: it is the half of the beans nobody sells you.
CHAPTER 2, THE RICE (arroz rojo). 1 cup long-grain rice rinsed and DRAINED dry · 3 Tbsp oil or manteca · blended: 1 roma, 1/4 onion, 1 garlic · 2 cups HOT liquid (use the bean broth from chapter 1) · 1 tsp salt. Toast the rice until it RATTLES, tomato in (it shrieks), fry it 2 min, ONE stir, liquid in, lid on, 18 to 20 min on low, 10 min rest off the heat, fork never spoon. Your absence is an ingredient.
CHAPTER 3, THE SALSA (salsa roja tatemada). 4 romas · 2 serranos · a thick piece of onion · 3 garlic cloves SKINS ON, all on a dry hot comal until black in PATCHES, 8 to 12 min. Molcajete (garlic + salt first) or PULSE the blender. Then FRY the salsa 3 min in a spoon of oil until brick red. Salt at the end. Keeps 5 days, freezes.
CHAPTER 4, THE TORTILLAS (corn, from masa). 2 cups masa harina (must say MASA or NIXTAMALIZED, never cornmeal) · 1/2 tsp salt · about 1 1/2 cups warm water · rest 20 min. THE PINCH TEST: press a little ball flat between your palms. Cracks, add water a teaspoon at a time. Sticks, a spoon more masa. Right is soft like an earlobe. Plastic bag squares on the press. Hot dry comal, THREE FLIPS: fast first (15 to 20 sec), long second (about 1 min), third back to the first face and watch it PUFF. Into a cloth immediately.
CHAPTER 5, THE EGGS (huevos a la mexicana). 6 eggs beaten with 1/2 tsp salt IN THE BOWL · 2 Tbsp fat · 1/4 onion diced + 1 serrano minced, fried TOGETHER 2 min (the chile fries with the onion, not the tomato) · 1 roma diced, 3 min · heat DOWN, eggs in, FOLD, out while still glossy. The pan should sigh, never hiss.
THE PLATE: a warm tortilla (ch 4), the eggs (ch 5), a spoon of the salsa (ch 3), the beans with their broth (ch 1), a little rice (ch 2). Five chapters on one plate, from scratch, in the time it took to watch this video.

Two bonus breakfasts from the same law: FRIJOLES CON HUEVO (beans warmed loose on one side of the pan, eggs scrambled on the other, folded together barely) and MIGAS (tortillas torn and fried crisp FIRST, then the eggs go in last with the heat down).

What you did not need: a special pan, a special store, or one ingredient you cannot pronounce. Beans, rice, tomatoes, masa, eggs. About eight dollars on the counter, and five dinners, a breakfast, and a jar of salsa came out of it.

⭐ WHY THIS VIDEO IS FIRST
A recipe is not the knowing. A recipe is what the knowing looks like written down for somebody who does not have it yet. Every recipe in my book stands on these five laws. Know the laws and the recipes become easy. Skip them and recipes are just instructions you follow nervously and cannot fix when they go wrong. Learn the five first. Then the recipes. That is the order my mother did it in.
