⭐️ STOVETOP BEEF CALDO
Menudo Rojo INGREDIENTS
2 lbs honeycomb beef tripe
3 1/2 to 4 quarts water (throughout cooking)
1/2 small onion
3 cloves garlic
1 dried bay leaf
3 guajillo chiles
1 chile ancho
1 chile de Arbol
1 tsp Mexican oregano
3/4 tsp ground cumin
1/4 cracked black pepper (optional)
3 cups low-sodium beef broth
salt to taste
Green Pozole INGREDIENTS
14 cups (3.3 L) water (to boil chicken and create broth)
3 lbs (1.36 kg) chicken (I used 2 lbs skinless legs and 1 lb chicken breast)
1 lb (454 g) tomatillos (or green tomatoes)
1 large onion
4 cloves garlic
2 dried bay leaves
2 chicken bouillon cubes
1 Tbsp Mexican oregano
salt and pepper to taste
2 poblano peppers
1/3 cup (50 g) pumpkin seeds toasted
1 handful of fresh cilantro
1 big handful of baby spinach
3 – 30 OZ cans of hominy (drained and rinsed)
*optional Add 1 to 2 jalapenos for a spicy pozole

Chicken Pozole INGREDIENTS
(To prepare the chicken)
5 1/2 lbs whole chicken (completely thawed)
5 quarts of water to boil chicken
1/2 small onion
2 large bay leaves
1 Tbsp Mexican oregano
4 cloves garlic
(To Prepare the Pozole)
4 to 4 1/2 pounds shredded cooked chicken
2 1/2 quarts chicken broth (broth from boiled chicken)
5 to 5 1/2 quarts of water
2 to 3 – 30 oz cans of hominy (drained and rinsed)
3 oz of menudo spice mix (I used Bolner’s Fiesta brand)

salt to taste (I started with 1 Tbsp)
Caldo De Albondigas INGREDIENTS
1 lb (454 g) lean ground beef
1/ cup (87 g) uncooked medium to long-grain rice
2 Tbsp chopped fresh cilantro
2 minced garlic cloves
1/2 tsp salt
1/4 black pepper
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
2 medium carrots
1 large potato
half of a small onion
1 medium Mexican squash or zucchini
9 oz crushed tomatoes (or 8 oz can of tomato sauce)
2 1/2 quarts (2.36 mL) water
2 1/2 Tbsp Knorr chicken flavored bouillon powder
pepper to taste
