CHICKEN BRUNSWICK STEW
6 cloves fresh garlic, coarsely chopped
2 (15-oz) can lima beans, drained
8 slices bacon
2 (14.5-oz) can fire-roasted diced tomatoes
1 can black beans, drained and rinsed
5 cups chicken broth (or stock)
1 teaspoon salt
2 teaspoon pepper
2 (9-oz) packages fully-cooked chicken breast
1 big package of frozen corn
1 onion chopped
4 tablespoons chipotle pepper sauce
1 cup barbecue sauce
2/3 cup apple cider vinegar
1. Cook bacon, remove from pan.
2. Cook chopped onions in bacon grease until tender, then add garlic and cook until aromatic.
3. Dump all ingredients listed above in crockpot, then add the garlic and onions.
4. Cook on high 3-4 hours or on low 5-6 hours.
This recipe makes a good amount and I always freeze the left overs and save them for another dinner.
