—————————————-———————- INGREDIENTS —————————————-————————————-
(to make 2 huaraches, Mexico City style )
-1 ½ cup of corn flour (Maseca)
-¼ cup of all purpose flour
-1 tsp of salt
-warm water, about 1 ½ cup (you’ll add it according to consistency)
-about 1 cup of black/pinto beans, smashed
-¼ cup of requesón or any crumbly cheese
-a bit of oil for the skillet / comal
-2-3 tbsps of lard (to fry)
-meat of your choice: I chose 1 thin steak but you can add chorizo, egg, etc.
Green salsa:
– 5 tomatillos
-1/3 white onion, in medium chunks
-1 poblano pepper – roasted, no seeds (unless you like it spicy!)
-3 garlic cloves
