RECIPE FOR MY MENUDO SPICE MIX

INGREDIENTS
3 lbs (1.36 kg) honey comb tripe (rinsed and washed well)
1 lb (454 g) drained and rinsed hominy
5 to 6 Tbsp (57 g) menudo spice mix https://amzn.to/2PQaeDL
2 tsp Mexican oregano
3 large cloves garlic (15 g)
1/2 piece of small onion (65 g)
1/2 cup water
1 Tbsp (10 g) beef bouillon powder
1 dried bay leaf
1 1/2 Liters water
salt to taste

IF YOU PREFER CHILI PUREE
Remove stems, seeds, rinse and clean 4 guajillo chiles and 2 ancho chiles
Boil and steep until softened
Discard soaking liquid and place softened chiles in a blender
Also add 1/2 cup water, 1 Tbsp beef bouillon, 1/2 piece of onion, 3 cloves garlic, 2 tsp Mexican oregano and puree well
