Mıhlama / Kuymak — Turkish Cornmeal and Cheese Fondue
3 tablespoons butter
2½ tablespoons cornmeal or corn flour
150 g kolot cheese, or another cheese that melts and stretches well like mozzarella
1 cup water
A good pincah of salt
• Grate the cheese into long shreds or use a vegetable peeler to shave it into long, thin ribbons.
• Melt the butter in a frying pan, preferably a copper one. Let it sizzle until the milk solids begin to brown and the butter develops a nutty aroma.
• Add the cornmeal and toast, stirring, until golden. Season with a good pinch of salt.
• Turn the heat down and gradually pour in the water, stirring continuously until the mixture thickens and becomes smooth.
• Add the cheese and leave it briefly without stirring, allowing the heat of the pan to start melting it. Using a wooden spatula or spoon, gently fold the mixture from the edges towards the centre. As the cheese melts, lift and stretch it until the mixture is combined and stretchy.Serve while it is hot and strechy.
• If it cools down, gently reheat it with a few tablespoons of water, folding from the edges towards the centre until the cheese is melted and stretchy again.
Tahini & Molasses Evil Eye
Tahini and molasses are two inseparable friends at a Turkish breakfast table. Grape molasses is the classic choice, but mulberry or carob molasses also work beautifully. If you can’t find molasses, try maple syrup.
• Pour some tahini into a small bowl, then pour the same amount of molasses into the centre, leaving a ring of tahini visible around the edge.
• Dip a toothpick into tahini and use it to place a small dot in the centre of the molasses. Your edible evil eye is ready!
• Mix together at the table and enjoy by dipping in bread. As you stir, the mixture will thicken into a rich, creamy spread with a nutty, caramel-like flavour.
Yağdibi — Toasted Butter & Flour Dip
A simple yet deeply flavourful dish from Diyarbakır, made with just butter, flour and salt. All you need is some bread for dipping.
3 tablespoons butter
3 tablespoons flour
A good pinch of salt
• Melt the butter in a small pan. Once it starts to foam, add the flour and salt.
• Cook over a medium-low heat, stirring constantly, until the whole mixture turns a deep golden brown and develops a rich, nutty aroma and flavour.
• Serve warm and enjoy straight from the pan with bread for dipping.
