Berry Crumble Cake
Ingredients –
For the Cake:
Fresh or frozen mixed berries β 250g (1Β½ cups)
Eggs β 3
Sugar β 175g (ΒΎ cup + 2 tablespoons)
Salt β ΒΌ teaspoon
Plain yogurt β 150g (β
cup)
Oil β 100ml (β
cup + 1 tablespoon)
Plain flour β 200g (1β
cups)
Baking powder β 1Β½ teaspoons
Vanilla extract β 1 teaspoon
For the Crumble Topping:
Butter β 55g (ΒΌ cup), melted
Plain flour β 50g (β
cup)
Sugar β 75g (ΒΌ cup + 2 tablespoons)
Equipment:
Measuring cup size: 240ml
Baking dish: 28 Γ 18 cm (11 Γ 7 inches)
Bake in a preheated oven at 180Β°C (350Β°F) for 45β50 minutes.
Method –
Prepare the Cake:
In a large mixing bowl, whisk together the eggs, sugar, vanilla extract and salt for about 4 minutes, or until the mixture is pale, light and fluffy.
Add the plain yogurt and whisk for 1 minute until smooth.
Pour in the oil and whisk for another 1 minute until fully incorporated.
Sift the plain flour and baking powder directly into the bowl.
Gently fold the dry ingredients into the batter until just combined. Be careful not to overmix.
Pour the batter into a lined baking dish and spread it evenly.
Scatter the fresh or frozen berries evenly over the top of the batter.
Prepare the Crumble Topping:
In a small bowl, combine the melted butter, plain flour and sugar.
Mix together until the mixture becomes crumbly.
Sprinkle the crumble topping evenly over the berries.
Bake:
Bake in a preheated oven at 180Β°C (350Β°F) for 45β50 minutes, or until the crumble is golden brown and a skewer inserted into the centre of the cake comes out clean.
Allow the cake to cool slightly before serving.
Serve
Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream, or allow it to cool completely and enjoy with a cup of tea or coffee.
