Ingredients for Chilli Garlic Chicken Fry:
(Tsp-Teaspoon; Tbsp-Tablespoon)
– Boneless Chicken, mix of thigh and breast – 500 gms
Tempering :
– Cumin seeds-1 tsp
– Garlic fine chopped-3 tsp (18-20 gms)
– Ginger, fine chopped -2 tsp ( 9-10 gms)
– Green chillies, cut-4-5 (15 gms)
– Onions, chopped- 2 medium (140-150 gms)
Spice Powders:
– Turmeric powder- 1/2 tsp
– Kashmiri Chilli powder -1/2 tsp
– Pepper powder-1/2 tsp
– Coriander powder- 1 tsp
– Fennel powder-1/2 tsp
– Garam masala powder -1/2 tsp
Other ingredients:
– Green chilli sauce (readymade) -2 tbsp
– Coriander leaves, chopped -4-5 tbsp
– Lemon juice -1.5 tsp
– Groundnut oil-4 tbsp
– Salt – 3/4 tsp
Preparation:
– Cut the boneless chicken into 2 inch pieces.
– Peel and fine chop the garlic and ginger. Cut the green chillies lengthwise.
– Fine chop the onions and also the coriander leaves to be used as garnish later.
Process:
– Heat oil in a tawa pan and then add the cumin seeds. Once it splutters add the fine chopped garlic, ginger and the cut green chillies. Sauté for a minute.
– Add the chopped onions. Mix and fry on medium heat for around 5-6 mins till light brown in colour.
– Now add the chicken pieces and mix and fry on high heat for 2 mins till the colour changes to white/ light brown.
– Next add all the spice powders and salt and mix and fry on medium heat for around 5 mins till browned.
– Now reduce heat to low, give a mix and cover & cook on low heat for another 10 mins till the chicken is tender. Do open the lid after 5 mins and give a stir.
– Now add the green chilli sauce and the lemon juice and mix it well. Simmer for around 2 mins.
– Lastly, garnish with chopped coriander leaves, give a mix and switch off heat
– Serve as a starter or with rice.
