Red wine and beef stock:
3 to 4 pounds chuck roast
1/2 cup dry red wine
1 cup beef stock
3 carrots cut into large pieces
2 small onions halved and seared
6 oz mushrooms
5 sprigs of thyme
12 whole peppercorns
1 tbsp Worcestershire sauce
2 tsp balsamic vinegar
3 oz unsalted butter
Salt and pepper to taste
Mississippi pot roast:
3 to 4 pounds chuck roast1 packet ranch dressing mix1 packet au jus gravy mix1/2 cup unsalted butter5 to 6 pepperoncini peppers1/4 cup pepperoncini juice (optional)Salt and freshly ground black pepper to taste)
