The Best Curry If You Don’t Eat Spicy

Yellow curry or “gaeng garee” is a classic and an absolute crowd pleaser, even for those who cannot tolerate much heat.

Those with sharp eyes may have noticed that I added something unusual into the curry. That is chopped rhubarb! My friend Byron and Alana gave me a giant bagful of frozen chopped rhubard from their garden.

I asked Byron, “what should I do with all this rhubarb??” He said, “It’s sour, so try using it where you normally use tamarind.” Wow. Brilliant. Yellow curry has a little tamarind added so the acid balances the richness, and I was out of tamarind, so rhubarb to the rescue.

By the time the curry was done the rhubarb had disintegrated into the sauce. It was perfect.
