My go-to recipe when I’m short on time takes less than 20 minutes to make. I’m sharing the secrets Abuela used to enhance the flavor of canned corn making this recipe a savory staple in our kitchen. I was taught from an early age to keep canned/jarred foods in my home; because you never know. Those are the little secrets Abuela shared while quickly making dinner and feeding all of us with a few ingredients. Ingredients
2 15.oz cans of corn kernels
1.3 pounds of ground beef
2 – 4.oz cans of green Chile
1 zucchini
1 large potato
1/2 an onion
3 garlic cloves
2 cups chicken broth or 2 cups warm water + 2 Tbsp chicken bouillon
1 tsp black pepper
1/2 Tbsp mexican oregano
1 small bay leaf
1 tbsp lard or favorite oil
2 green onions
1 Tbsp maseca + 2 Tbsp water

Serve with pinto beans and cilantro lime rice
