Recipes I Want My Kids to Remember Episode 2 Chili

Here is our family’s recipe for Chili. We have it year round! Write up of recipe is below! Thanks for watching!

Chili

1 onion, chopped very finely
1 bell pepper, chopped
1.25 lbs ground beef (or whatever meat you prefer)
1 can black beans (or beans you prefer)
1 6 ounce can of tomato paste
2 Tablespoons of chili powder
1 tsp cumin
½ tsp salt
1 tsp garlic powder
Oil
Either, rice, cornbread, fritos, pasta, whatever you desire to eat chili with

1. In a large pot with a lid, cook up onion and bell pepper in a small amount of oil.
2. Once softened, add in the beef. Cook until browned. Scoop out any excess fat.
3. Add in beans, tomato paste and seasonings. Add in additional bean can’s worth of water.
4. Let everything cook for 30 minutes. Test taste it. Adjust seasonings if needed, mine needed no adjusting. Cook an additional 30 minutes if you have the time.
5. Serve with whatever you want. Rice, pasta, cornbread, fritos….etc.

Cornbread

1 cup flour
1 cup corn meal
1 cup of milk
1 egg
⅓ cup melted butter
⅓ cup sugar
1 Tablespoon baking powder
1 tsp salt

1. Grease or line a 8” square or round pan.
2. Preheat oven to 375 degrees.
3. In a bowl add in the flour, corn meal, sugar, salt and baking powder. Stir to combine.
4. Now add the wet ingredients: milk, egg, melted butter. Mix really well. 5. Then pour the batter into the pan.
5. Bake in the oven for about 25 minutes.
