Hello folks!
Tonight for tea we had this amazing creamy potato & ham soup! Not only was the super easy – it was absolutely delicious! Like a big hug in a bowl 🙂 Perfect on it’s own but especially good with some crusty bread on the side. This is such a filling soup and the recipe goes a long way.

What I used – Serves 4-5 people
2 lbs (32 oz) Potatoes – washed and diced
1 Large stalk of celery – diced
1 Medium onion – diced
200g (7 oz) Sliced/diced carrots
700ml (25 oz) Chicken broth/stock
1 Teaspoon mustard – I used English mustard but Dijon would be perfect.
1 Teaspoon garlic powder
1 Teaspoon salt
1 Teaspoon smoked paprika powder
1⁄2 Teaspoon freshly ground pepper
1⁄4 Teaspoon ground nutmeg
2-3 Bay leaves
200ml (7 oz) Double/heavy cream
2 Tablespoons cornflour/cornstarch
100ml (3.5 oz) Sour cream
400g (14 oz) Cooked ham
A handful of fresh parsley – chopped
