The Best Chicken Noodle Soup
1 Rotisserie Chicken (OR 3 cups cooked and shredded chicken)
1 Package Aunt B’s Frozen Dumplings
1 small Package Baby Bella Mushrooms, sliced thin
4 stalks Celery, sliced thin
3 Carrots, sliced thin
1 Onion, chopped
2 30 oz. Cartons Chicken Broth
2 TBSP Butter
1 Garlic Clove, Minced
1/4 TSP dried Thyme
1/4 TSP Rosemary
Salt & Pepper to taste (I did not add any additional salt. Chicken Broth is plenty salty!)
In large pot, melt butter and saute garlic for 30 seconds. Add in veggies and cook for 10 minutes. Next, pour in broth. Add seasonings, shredded chicken, and frozen dumplings. Break dumplings in half or smaller into desired size. Cover and simmer for 45 minutes.
