Shakshuka | Poached eggs | One pot Middle-eastern breakfast | Brunch recipe

Ingredients:

– 3 tbsp olive oil
– 1 capsicum medium
– 1/4 tsp salt
– 3 minced garlic cloves
– 3 tbsp pizza sauce
– 1 tsp ground cumin
– 1/4 tsp chili powder
– 250 grams ripe tomatoes
– parsley or coriander leaves for garnish
– freshly ground black pepper to taste
– 4 to 5 large eggs
– 1 large onion
– 1/4 cup grated mozzarella
– sliced black olives for garnishing
– chopped green chillies for garnishing
– crusty bread or pita for serving
