Easy Brunch Recipe 🍳 What I Make When My Fridge Is Almost Empty

An easy shakshuka recipe for those days when your fridge is almost empty 🍳 This “egg in hell” is one of my favorite easy brunch recipes because it comes together with simple pantry ingredients and tastes so much better than the effort it takes.

I make mine with a tomato sauce simmered with garlic, onion, tomato, tomato paste, bay leaf, salt and pepper, then crack in two eggs and add little spoonfuls of ricotta cheese. I love eating it with toasted sourdough for dipping into all that saucy goodness 🤍

Easy shakshuka recipe:
* olive oil
* 2 garlic cloves, minced
* 1/2 onion, chopped
* 2 tomatoes, chopped
* 1/2 cup tomato sauce
* 1 tbsp tomato paste
* 1 bay leaf
* salt + black pepper
* 2 eggs
* ricotta cheese
* toasted sourdough

1. Heat olive oil and sauté the garlic and onion.
2. Add chopped tomatoes, tomato sauce, tomato paste and bay leaf.
3. Season with salt and pepper, then let everything simmer until the sauce thickens.
4. Make two little wells and crack in the eggs.
5. Add ricotta cheese on top and cook until the eggs are done to your liking.
6. Serve with toasted sourdough and dip away.
Save this for the next time you have random ingredients sitting in your fridge 🫶
