Today is Mexico’s Independence Day, and I’m celebrating with a big bowl of Pozole Verde 😋 This dish holds a special place in my heart, my best friend first made it for my birthday a few years back, and ever since then it’s been one of my absolute favorites 🥰 If you haven’t tried Pozole Verde yet, trust me… you’re in for a treat!

POZOLE VERDE INGREDIENTS:
For the pozole:
► 5 lbs. chicken
► 1 whole white onion
► 2 garlic heads
► 3 tbsp salt
► 5 bay leaves
► 110 oz White Hominy (Maíz Blanco)
► 1 tsp chicken bouillon
► Some cabbage
► Some white onion
► Some cilantro
► Some radish
► Some lime
For the sauce:
► 1 Anaheim pepper
► 2 pasilla peppers
► 12 tomatillos
► Bunch of spinach
► Small bunch of radish leaves
► Small bunch of cilantro
► 1 tsp of oregano
► 1 tsp of black peppercorn
► 3 cups chicken broth
For the mixture:
► 3 cups Hominy
► Some chicken broth
► 2 jalapeños
► 5 garlic cloves
► 3 tbsp chicken bouillon
