Ingredients:
1) Chicken Thukpa:
400 gm chicken
10 cups water
Noodles
Chilli soy sauce
2 onions (1 sliced, 1 diced)
10–12 garlic cloves (7–8 for stock, 3–4 for paste)
1 tomato
½ inch ginger
1 bird eye chilli
1 tsp Schezwan pepper
1 tbsp oil
1 cup carrot
1 cup cabbage
Salt to taste
2 tbsp coriander leaves
Spring onions (for garnish)
2) Malaysian Chicken Laksa:
200 gms chicken breast (cut into strips)
Noodles
1 cup coconut cream
2 cups water
2 tbsp oil
5–6 dried Kashmiri red chillies
4–6 bird’s eye chillies
Chopped lemongrass stalks
1-inch galangal (chopped)
3–4 kaffir lime leaves
Chopped coriander stalks
4–6 Thai basil leaves
1/4 cup shallots
8–10 garlic cloves
1 tsp turmeric powder
1 tbsp coriander seeds powder
2 tsp sugar
1 tsp dark soy sauce
Salt (as required)
Boiled egg slices (for garnish)
Coriander sprig (for garnish)
3) Chicken Hot & Sour Soup Recipe:
100 gms boneless chicken (shredded)
Chicken stock (as required)
1 egg
1 tbsp flavourless oil
1 1/2 tsp garlic
1 tsp ginger
1/3 cup carrots
1/3 cup French beans
3 button mushrooms
2 tsp black pepper
Red chilli powder (as required)
Dark soy sauce (as required)
Vinegar (as required)
4) Crab Soup:
2 crabs (cleaned)
1/8 cup coriander leaves
1 tbsp garam masala powder
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/4 cup dry coconut
1/8 cup onion (sliced)
8–10 garlic cloves
1-inch ginger (sliced)
3 green chillies
1 tsp oil
1 tbsp oil
Water (as required)
Salt (as required)
5) Egg Drop Soup Recipe:
2 tomatoes (chopped)
4 cups chicken stock
1 egg (beaten)
2 tbsp cornflour slurry
1 tbsp oil
1 tbsp spring onion bulbs (chopped)
1 tsp garlic (finely chopped)
1 tsp black pepper powder
1/2 tsp tomato ketchup
1 tsp soy sauce
Coarse salt (as required)
Spring onion greens (for garnish)
