🍰 Ingredients:

Cake:

Sugar 200g (1 cup)
Lemon zest 1 teaspoon
Butter 110g (1/2 cup)
Vegetable oil 30ml (2 tablespoons)
2 Eggs
Lemon juice 30ml (2 tablespoons)
Plain Flour 200g (1 ⅓ cups)
Baking powder 1 teaspoon
Milk 100ml (1/3 cup & 2 tablespoons)
Vanilla extract 1 teaspoon

Lemon Curd (Homemade):

Juice of 2 Lemons
Sugar 100g (½ cup)
Butter 55g (¼ cup)
2 Eggs

For the White icing lines:
Powdered Sugar 60g (½ cup)
Milk 1-2 tablespoons

Measuring cup size – 240ml
Baking pan size 22×22 cm

Method:

In a bowl, add the Flour,baking powder, sugar and the Lemon zest
Mix well.
Now add the Eggs, Oi, Butter, Milk, Lemon juice and Vanilla to the same bowl.
Whisk at low speed for about 30 seconds.
Mix with a spoon to make sure everything is combined.
Whisk again for about 30 seconds.
Give it a final mix.

Pour into a lined baking tray

Now bake in a preheated oven at 175c (350f) for 30-35 minutes.

Making the Lemon curd:
You can use a shop-bought Lemon curd too (about 300g)

Put a bowl over a simmering pan. (Bain-marie method).
Add the Lemon juice and the sugar.
Mix and let it melt
Now add the Butter.
Mix until it dissolves.
Now add lightly whisked eggs.
Keep whisking continuously.
Until you get a thicker mixture.
It will take about 4-5 minutes

Pour into a bowl and cover.

Once the cake is ready, poke holes while it’s warm.
Pour the lemon curd over it.
Let it cool down (Or chill in the fridge)

Make the white icing by mixing the powdered sugar and the milk.
Add to a small sandwich bag/ piping bag.
Draw white lines over the curd.
