🍰 Ingredients:
4 Eggs
Sugar 100g (½ cup)
Plain Flour 100g (⅔ cup)
Baking powder 1 teaspoon
Salt ¼ teaspoon
Vanilla extract 1 teaspoon
Berries frozen or fresh 1 cup
Cream Cheese Frosting:
Cream Cheese 75g (⅓ cup)
Powdered sugar 200g (1 ⅔ cups)
Vanilla extract 1 teaspoon
Method:
Separate the eggs
Whisk the egg whites with sugar and salt
Whisk until stiff peaks form
Then add the yolks one by one and whisk for 30 seconds each
Fold in the flour and the baking powder
Add the vanilla and fold gently
Baking pan 20×20 cm (8×8 inch)
Put the baking paper in the baking pan
Add the Berries
Pour the batter over the berries
Tap few times
Now bake in a preheated oven at 175c (350f) for 25-30 minutes
Let the cake cool completely
For the frosting, whisk everything for few minutes until creamy
Spread over the cooled cake
Enjoy this very light fruit cake!
