Episode 4: Spicy Lemon Pepper Chicken 🍋🌶️
Continuing my recipe series where I show you all my favorite chicken recipes! This is one of the easiest yet most flavorful chicken recipes I know! It’s the perfect recipe for dinner or meal prep, and you can have it ready in 30 minutes. I make it right on the stove top, but you can do it in the air fryer, grill, or oven. Add it on top of a salad or grain bowl and enjoy the balance of spicy, tangy, and savory. Cheers!
Ingredients:
-2 lbs chicken thighs, boneless and skinless
-3 tbs neutral oil
-1 tbs onion powder
-1 tbs garlic powder
-1 tbs smoked paprika
-1 tbs lemon pepper seasoning
-1 tsp cayenne pepper
Instructions:
-trim off any excess fat from the chicken
-add the chicken into a large mixing bowl
-add oil and all the spices listed; mix well
-marinate in the fridge for 2 hours up to overnight (optional)
-set a pan or skillet on medium-high heat and add 3 tbs olive oil
-just as oil starts to lightly smoke, lay the chicken into the pan away from you and pat down to increase surface contact
-cook the chicken for 5-6 minutes on one side and flip over when the meat has a nice sear on the bottom and begins to turn white up the edges
-cook the other side for 3-4 minutes until internal temperature is 170-180F
-allow chicken to rest for 10 minutes before slicing or serving
-enjoy!
