1. BLUEBERRY DESSERT CUPS (makes 5 x 220ml cups)

250g (2 cups) fresh or frozen a thawed blueberries
250ml (1 cup) whipping cream (minimum 33% fat)
150g white chocolate

2. PASSION FRUIT DESSERT CUPS (makes 2 x 220ml / 8oz cups)

50g store bought Maderia cake or sponge cake (or 2 x small vanilla muffins)
50g white chocolate
100g (2/3 cup) cream cheese
150ml (2/3 cup) whipping cream
1 tsp vanilla essence
lemon zest of 1/4 lemon (1 tsp)
2 passion fruits
fresh mint for decoration (optional)

3. PINEAPPLE TIRAMISU DESSERT CUPS (makes 5 x 160ml cups)

200ml (3/4 cup) whipping cream (minimum 33% fat)
2 tbsp sugar
1 tsp vanilla extract
10 Savoiardi biscuits / ladyfingers
100ml (1/2 cup) pineapple juice
150g fresh pineapple

4. MANGO DESSERT CUPS (makes 7 x 160ml cups)

200g mango chopped
2 tbsp sugar
2 tbsp sugar
4 tbsp cornstarch (US) / cornflour (UK)
300ml (1 1/4 cup) milk
100g vanilla cake or muffins (madeira cake aka loaf cake, pound cake)
200ml (1 cup) whipping cream (minimum 33% fat)
2 tbsp sugar
100g finely chopped mango
mango cubes for decoration

5. RASPBERRY DESSERT CUPS (makes 4 x220ml cups)

1 tbsp corn flour (UK) / corn starch (US)
2 tbsp water
275g raspberries (fresh or frozen)
2 tbsp sugar
1/2 tsp lemon juice
250ml whipping cream (minimum 33% fat)
2 tbsp sugar
1/2 vanilla extract

6. KIWI DESSERT CUPS (makes 4 x 220ml cups)

4-5 kiwis
1 tbsp sugar
75g vanilla cake or muffins
125g (1/2 cup) cream cheese (such as Philadelpfia)
2 tbsp sugar
1/2 tsp vanilla extract
125g (1/2 cup) whipping cream
fresh mint leaves for decoration (optional)

7. STRAWBERRY TIRAMISU DESSERT CUPS RECIPE (makes 7 x 160ml/6oz cups)

200g strawberries (weight without stems)
2 tbsp sugar
1/2 tsp lemon juice
100ml (1/2 cup) milk (any)
14 Savoiardi biscuits (Ladyfingers / sponge biscuits)
250ml (1 cup) whipping cream (at least 33% fat)
2 tbsp sugar
1/2 tsp vanilla extract

8. ORANGE DESSERT CUPS (makes 5 x 170ml cups)

300ml (1+1/3 cup) orange juice
20g (2 tbsp) cornflour (UK) / corn starch (US)
1-2 tbsp sugar (add to juice if it’s sour)
80g Vanilla cake (Madeira cake aka loaf cake, pound cake or vanilla muffins)
1 medium orange
250ml (1 cup) whipping cream (minimum 33% fat)
2 tbsp sugar
1 tsp vanilla extract
halved orange slices for decoration

9. STRAWBERRY DESSERT CUPS (makes 8 x 160ml / 6 oz cups)

Jelly layer:
We need 600ml (2 + 1/2 cups) of jelly, please refer to your jelly instructions as it may vary.
I have: 2 x 85g strawberry flavour jelly powder sachets
550ml (2 + 1/4 cups) boiling water to dissolve the jelly powder

Custard layer:
2 heaping tbsp custard powder
2 tbsp sugar
600ml (2 + 1/2 cups) milk

Cream layer:
200ml (3/4 cups + 2 tbsp) whipping cream
1 tbsp sugar
1 tsp vanilla essence

For decoration:
fresh strawberries or any other fruits
