Nutritious creamy appetizer- Corn Spinach dip to enjoy with bread and chips at home.

The Ingredients and the Preparing method of the Corn Spinach Dip is given below:

INGREDIENTS:

1 tbsp olive oil
2 tbsp butter
½ cup onion, finely chopped
1 ½ cups spinach finely chopped
1 tsp Crushed garlic
¾ cup American Sweet corn
1 tbsp Butter
1 tbsp Maida
1 cup Milk
½ cup chopped tomato
Salt –3/4 tsp
1 tsp red pepper
Crushed black pepper – ½ tsp
Grated processed cheese – 3 cubes
1 tsp oregano /mix Italian seasoning

METHOD:

• Wash the spinach 3-4 times with water. Strain.
• Boil the corn in a microwave for around 2 min. with a cup of water. drain the water and keep aside.
• Put oil and butter in a pan and sauté onion and garlic in it, add in spinach and tomatoes, corn and cook well for around 4-5 min. Add salt, seasoning and red pepper.
• Put to low flame another pan, add in butter and flour and keep stirring continuously on a low flame. Keep stirring until it turns light golden in colour.
• Now keep adding very small quantity of milk and continuously stir to avoid lumps. Pour the entire quantity of milk and lower the flame. add in grated cheese and black pepper.
• Add in spinach garlic mixture into the white sauce and mix well.
• Toast some breads and serve with corn spinach as a topping.
• Also goes well with crackers or chips.

NOTE:
For lactose intolerance, milk can be replaced with cashew paste.
Just soak ¼ cup cashews in little water for 15 min and blend to a fine paste.
Replace with milk and follow the remaining procedure.
