Hi there you beautiful people and welcome or welcome back to my channel! 😃

And today, we will be cooking SLOW COOKED BEEF KALDERETA with my newly bought SLOW COOKER which I was dreaming to buy for for a long time now and finally I was able to! I already tried cooking PAKSIW NA PATA (Pork Leg Paksiw) and SLOW COOKER FUSSILI PASTA IN WHITE SAUCE WITH BROCCOLI but were not that successful but finally, I was able to cook something close to perfect with my slow cooker which is BEEF KALDERETA that is why I will be sharing with you how I cook it! This is so yummy and I recommend cooking this recipe for your family too! 😃

INGREDIENTS I USED:

2.5 Lbs. Beef Stew Meat cut into chunks or Rib Part will be a better option
Canola Oil / Olive Oil
3 Garlic Cloves – peeled and minced.
1/2 Medium Onion – sliced (my daughter is allergic to this so I used just a small amount)
2-3 Plum Tomatoes – chopped
Carrots – sliced into 1-inch thickness
Red Potatoes – cut into cubes (roughly the same size as the carrots).
1-3 Bay Leaves – fresh or dried.
1 Cup Water – Beef Bullion Cube is good but I forgot to buy one
Fish Sauce or Soy Sauce – choose your favored seasoning. Traditionally, it’s seasoned with fish sauce but feel free to use soy sauce if you prefer this.
1/2 cup Tomato Sauce
1/4 cup Tomato Paste
1/2 cup Liver Spread – or peanut butter if you want
Bell Pepper
Peas – fresh or frozen
Coconut Sugar or Brown Sugar – not to make it sweet but to balance and enhance flavors so don’t omit if possible.
Salt and Pepper – adjust to taste.

How To Cook Slow Cooker Beef Kaldereta:

1. Season the beef chunks with salt and pepper. In a large frying pan (like a heavy stainless steel or cast-iron skillet), heat the oil until hot but not smoking. Sear the beef by browning on all sides in the hot oil. Keep some space in between the beef chunks when frying so don’t dump all the beef but cook in batches. Place in a plate as you cook. This method will ensure a deep and delicious taste from the meat so if you can don’t omit the step.

2. In the remaining oil (or add a little oil to the skillet if needed) saute the garlic, onions, and tomatoes for 3-4 minutes. The purpose is to deglaze the pan with the juices from the veggies and get all the yummy brown bits remaining there for extra flavor. Place the beef and the sauteed vegetables in the slow cooker.

3. Add and bay leaves. Pour the beef broth (or water), fish sauce or soy sauce, tomato sauce and tomato paste. Give it a quick stir. Cover and cook on low until the beef is fork-tender between 5-7 hours.

4. Once beef becomes tender, you may now pan fry the carrots & potatoes just until browned or you may use your air fryer if you have one.

5. Add the pan fried carrots & potatoes to the pot and then add the liver spread and red bell pepper. You can also add the frozen peas at this point. Add the sugar, if using. This is not to sweeten the stew but to enhance the flavor. Season with extra salt and pepper, if needed. Stir everything gently. Cook for another 30 minutes to 1 hour or until everything is fully heated through. Serve with freshly steamed rice on the side.

Total time: 7 hrs. 30 mins.
