INGREDIENTS
2 lb beef chuck roast
1 dried bay leaf
1 Roma tomato
1 jalapeño
1 guajillo chile
1/2 small onion
3 cloves of garlic
1/2 tsp ground cumin seeds
1/2 tsp cracked black pepper
1/2 tsp Mexican oregano
3 cups beef broth
1 cup water for puree
salt to taste
12 corn tortillas
8 oz low moisture mozzarella cheese
