– 500g stewing beef or lamb, cut into small pieces

– 3-4 tablespoons vegetable oil
– 1 teaspoon turmeric
– Salt and black pepper to taste
– 2-3 dried limes (limoo amani)
– 1 cup split yellow peas (gheymeh)
– 4-5 cups water
– 1 tablespoon tomato paste
– 1 tablespoon lemon juice
– 1/2 teaspoon cinnamon (optional)
– 1/2 teaspoon saffron (optional)
– 1 tablespoon sugar (optional)

For the garnish:

– French fries or fried potato sticks
– Fried onions
– Cooked saffron rice

Instructions:

1. Rinse the split yellow peas and soak them in water for at least 2 hours, or overnight.

2. Heat the oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until translucent.

3. Add the meat to the pot and cook until browned on all sides.

4. Add turmeric, salt, and black pepper to the pot and stir well.

5. Poke a few holes in the dried limes and add them to the pot.
