Crispy Potato Cakes: Makes 8 Patties

Ingredients:
🍀 1/2 Tuscan Kale & Leek Mashed Potatoes recipe
🍀 1 egg
🍀 Spices of choice
🍀 1 tsp baking soda
🍀 1/2 – 3/4c flour
🍀 Oil for frying

Directions:
🍀 Combine all ingredients in a bowl
🍀 Start with 1/4c flour and add until you get a dough that’s thick, but drops off of the spoon
🍀 Heat oil in a skillet over medium heat.
🍀 Drop batter into oil and fry for 2-3 mins per side, or until desired brownness.
🍀 Serve hot with toppings. Enjoy!
