INGREDIENTS:
1 tbsp canola oil
2 lbs beef, cubed
Salt & pepper
1 cup chopped onions
2 minced garlic
1 heaping tbsp flour
4-5 cups beef broth
1-2 cup water
2 cups chopped carrots
2 cup chopped potatoes
1 cup chopped celery
2 heaping tbsp tomato paste

DIRECTIONS:
1.) Heat up your pot on medium high heat and add canola oil. Season beef with salt and pepper, and brown the beef on each side. Once brown, remove from pot.
2.) In the same pot, saute onions and garlic for 1 min, then add the flour. Cook for another minute.
3.) Return the beef and its dripping back in the pot. Add a splash of beef broth to deglaze the bottom of the pot. Then add 4-5 cups of beef broth. Skim any excess fat out. Then put the lid on and simmer on medium low heat for 1 hour.
4.) After 1 hour, add 1-2 cups of water. Add the carrots, potatoes, celery, and tomato paste. Let it simmer for 10-15 min or until vegetable are thoroughly cooked.
5.) Serve with a bowl of rice. Enjoy!
