PUFF PASTRY MUSHROOM CUPS
►1 onion
►1 lbs. of mushrooms
►1 tsp of salt
►1/2 tsp of black pepper
►2 tbsps. of lemon juice
►2-3 tbsps. of fresh thyme
►2 sheets of puff pastry
►2 cups of your favorite cheese (I used mozzarella, but gruyere or Swiss cheese will work as well)
Make Ahead Tip – You can make the mushroom mixture up to 3 days ahead. Just cover it and place it in the fridge until you’re ready to use it. Once these Mushrooms Cup are assembled you can cover them with aluminum foil a day ahead, refrigerate and bake at 375F for 25-30 minutes right before serving. Or you can even bake them a day ahead and warm them up right before serving.

TEA SANDWICHES (if you’re making 4 sandwiches you will need)
►8 slices of white bread (Square shape)
►1 can of tuna (drain the water)
►1-2 tbsps. of mayonnaise
►A few slices of cucumber
►4 toothpicks

►16oz of softened unsalted butter
►1 cup of sugar
►Splash of vanilla extract
►1 egg
►3 cups of flour
►1 tsp of baking powder
►1 pinch of salt
Make Ahead Tip for the Dough- Wrap the dough in plastic and Place in the fridge for 30 minutes. You can keep the dough for a few days until you’re ready to use it. And here is a great make ahead tip. Wrap your dough tightly in plastic wrap and store it in a freezer bag. You can keep it in the freezer for up to 2 months before you need to use it. When you are ready to bake, allow the dough to thaw in the fridge overnight.
Make Ahead Tip for the Cookies – bake and decorate your cookies 1-2 days in advance and keep them at room temperature in a cool/dry place.
