Our Baked Eggs Casserole is the best potato hash breakfast, it’s layers of crispy breakfast potatoes, caramelized onions, sauteed spinach and peppers, topped with baked eggs in a couple of cheesy pockets. This breakfast potatoes skillet recipe is super easy and looks amazing, it’s perfect for the weekend and special enough for your holiday breakfast or brunch recipe list.

This potato hash with baked eggs is like an ultimate version of the breakfast potatoes we shared a while back, I’ll link that up here for you in case you want to check it out too.

Baked Eggs Casserole | Potato Hash Breakfast Ingredients
4 – 6 eggs
4 large russet potatoes
1 sweet onion
1 clove garlic
1 cup spinach
about 1 cup quesadilla cheese (or other melty cheese)
4 tablespoons melted butter
avocado oil
salt and pepper
peppadew peppers (optional)
for serving, parmesan cheese, parsley or chives

Baked Eggs Casserole | Potato Hash Breakfast Directions
Begin preheating oven to 375 degrees. First, to make the breakfast potatoes. Wash and scrub 4 russet potatoes, and dice the potatoes into pieces that are about ½ inch in size. Place the potatoes in a single layer on a microwave safe plate, and microwave on high until they’re tender. And for me, it’s right around 2 and half minutes.

And while the potatoes cook in the microwave, peel and slice one large sweet onion, then cut it in half and thinly slice each half. Cook in a separate pan, so they have plenty of time to get nice and soft and caramelized. Heat about two tablespoons of avocado oil in a medium sized skillet over medium heat, and add the onions.

Once all of the potatoes have been microwaved and are tender, heat 3 – 4 tablespoons of avocado or other neutral oil over medium high heat. Add the potatoes and toss to coat all of the potatoes with the oil. Continue to cook the potatoes over medium high heat, stirring every so often, until the potatoes are golden and crispy, about 10 – 15 minutes.

Season with salt and pepper. Add a cup of fresh spinach, stirring the leaves into the potatoes and cooking just until the spinach is wilted. Reduce the heat to medium. Then take small handfuls of the cheese, and tuck into the potatoes, making a pocket or nest for each egg. While the skillet continues to cook, grate or mince one close of garlic into the caramelized onions, give it a stir and cook until the garlic is fragrant, about 30 seconds. Then spread the onion mixture over the top of the skillet.

I’m tucking in a few peppadew peppers, these are pickled, and taste a little sweet, slightly spicy and gives a pickled brightness that’s perfect in this dish. Gently crack the eggs over the top of the cheese pockets. And then spoon melted butter over the top of each yolk. Drizzle any extra butter over the potatoes for a buttery crisp bottom. Season the top with salt and pepper.

Bake in the 375 degree oven until the eggs are set, about 8 -10 minutes. Give the skillet a jiggle to see if they’re set enough for you. To serve, top with parmesan cheese, parsley or chives, and crusty sourdough toast.
