You may be surprised to learn that beef Barbacoa is made from cow head, a commonly discarded cut of beef, containing cartilage, gristle, cheek and tongue. Both carnitas and barbacoa are best when slow cooked, and Mexican barbacoa was originally cooked in an underground pit.
