Chilaquiles Mexican Food Recipe
Some people would say this is nachos with eggs, but I call it Chilaquiles since the first time they were made for me that’s what they were called. Very simple great for breakfast.
Preparation:
Cut 10 corn tortillas into 1/8ths
Cook in skillet with 2 tablespoons oil until crispy
Add 4 eggs, stir until cooked
Place in baking pan, top with cheese and salsa
Bake for 6 minutes in 400 degree oven
Serve with avocado
