STOP Buying Mexican Food! The $5 Fajitas That Beat Any Restaurant

Mija, come here and look at this platter with me. Twenty-two dollars for a few gray strips of beef and some limp peppers under a lot of noise. Fajitas are two opposite jobs: the meat wants TIME before it touches the fire, the peppers and onions want SPACE once they do. Here is the whole platter at home for about five dollars a plate, and at the end, how the restaurant makes that sizzle.

⭐ THE MEAT (marinate the SAME morning, 1 to 4 hours, never overnight, book page 300)
• 2 lb skirt steak, flap meat, or flank, membrane trimmed, cut ACROSS the grain into finger-length strips
• 1 1/2 tsp salt, rubbed on first, alone
• Juice of 3 limes, 4 garlic cloves crushed to a paste, 2 tbsp oil
• 1 tsp cumin, 1/2 tsp black pepper, 1 tsp chile powder

⭐ THE VEGETABLES
• 1 big white onion and 2 bell peppers (red and green), cut in THICK strips
• or my mother’s way: 1 poblano, charred and cut in strips (page 156)

⭐ THE METHOD
1. Strips on the counter 30 minutes before. Lift out of the marinade and pat DRY.
2. Cast iron on high 5 minutes, until a drop of water dances and vanishes. Thin film of oil.
3. ONE handful of meat at a time, no strip touching another. 2 minutes untouched, toss, 1 more minute. Out to a plate. Repeat.
4. Vegetables in the same pan, in the meat’s fat, spread out. 2 minutes untouched to char, toss, 2 more. They should snap, not flop.
5. Meat back in for 1 minute. Off the heat: a last small pinch of salt and a squeeze of lime.
6. Tortillas warm in a clean kitchen towel. Salsa, guacamole, crema.

⭐ THE SIZZLE (restaurant theater, page 55)
While the vegetables cook, heat a second cast iron or your comal on high. Turn it off, pile everything on the hot iron, carry it to the table on a wooden board, and squeeze a half lime over it or pour one spoon of water on the edge of the iron. That is the whole show.

THE HONEST WORDS:
• Tough → cut along the grain, or the lime sat too long.
• Gray → crowded pan or wet meat.
• Soggy peppers → stirred too much or cut too thin.
• Smoke alarm → open a window. A real sear makes smoke.

WHO PROFITS: a restaurant fajita plate is $22 for one person. Two pounds of skirt steak, peppers, onion, limes, garlic, and tortillas are about $24 at my store and feed five, about $5 a plate. What you paid for was the noise.

THE HABIT: make the full two pounds. Friday fajitas, Saturday eggs with the leftover meat and peppers, Sunday fajita quesadillas.
