600g chicken breast fillets
2 tbsp dark soy sauce
1 tbsp sugar
1 tbsp honey
2 inch piece ginger
1 tbsp vingegar
2 tbsp water
2 garlic cloves
1 spring onion
1/2 tsp salt on chicken (optional)
1 tbsp corn starch
1-2 tbsp oil
Note: Keep on a medium high heat throughout and just before adding the sauce to the chicken, reduce to a low heat.
