Steamed Instant Pot Artichokes Recipe

Love artichokes but don’t want to wait for them to cook forever on the stovetop? Making Instant Pot Artichokes will have them on your plate in about 15 minutes (including the time it takes for the IP to warm up!)

INGREDIENTS
4 artichokes washed and trimmed
4 garlic cloves
1 lemon sliced
INSTRUCTIONS
Trim the artichokes by removing the tough outer leaves and snipping of any sharp thorns. Cut 1/2 inch off the top of the artichoke and cut off the stem so the artichoke sits flat on a plate.
Place the steamer rack in the bottom of the Instant Pot or Pressure Cooker.
Arrange the artichokes in a single layer on the steamer rack stem side up.
Add the garlic, lemon and one cup of water to the pot. Close the lid and set to seal.
Set the Instant Pot to High Pressure and cook for 5-15 minutes depending on the size of the artichoke. (5 minutes for small, 10 minutes for medium, 15 minutes for large)
When the artichokes are done cooking, release the pressure manually using the quick pressure release.
Remove the artichokes and serve with melted butter or use in your favorite recipe. Discard the lemons and garlic.
