Not just fried, but baked eggs are the new way to do it. Combined with caramelized mushrooms this makes a rich and delicious breakfast or brunch recipe, perfect for serving guests and small groups.

For 2 servings you will need:

4 eggs
2 tbsp cream
2 tbsp Parmesan cheese (grated)
5 oz mushrooms (brown)
3 sprigs thyme
2 tbsp maple syrup
½ tsp garlic powder
¼ tsp ground caraway
butter for frying and greasing
chives for serving
bread for serving
