Ingredients
Nopales (Cactus)
Queso Oaxaca or your choice of melty cheese
Eggs
Pinto beans
Salt
Lime or lemon
– Adjust ingredients to each nopal as they do come in different sizes
This recipe pairs well with Mexican rice and a side salad
