Spring Potato is a famous #SnackRecipe loved by everyone. This #SpringPotato is made by cutting potatoes into a spiral, deep-frying it and topping it with a spice mix and mayonnaise. Spring Potato Recipe:

Potato (medium-sized) – 2 nos
Maida / All-Purpose Flour – ¼ Cup
Cornstarch – ¼ Cup
Water – ½ Cup
Kashmiri Chilli Powder – 1 tsp
Chaat Masala – 1 tsp
Salt – ½ tsp
Oil (for deep-frying) – As Needed

Toppings:

Lemon Juice – 2 tbsp
Chaat Masala – ½ tsp
Red Chilli Powder – 1 tsp
Black Salt – ½ tsp
Coriander Leaves (finely chopped) – 2 tbsp
Mayonnaise (optional) – As Needed

Cooking Instructions:

1. Combine the maida, cornstarch, Kashmiri chilli powder, chaat masala, salt and water to form a batter.

2. In the meanwhile, you can prepare the topping mix. Mix chaat masala, black salt and red chilli powder together and set it aside.

3. Insert the skewer lengthwise into the centre of a potato. Cut the potato into a thin spiral carefully. Gently separate the potato slices from each other.

4. Using a ladle, pour the batter over the potato.

5. Fry it in oil over medium heat until it turns golden brown and crisp.

6. Remove from the oil. Immediately squeeze lemon juice over the fried potato. Sprinkle the previously prepared topping mix over the potato on all sides.

7. Top it with mayonnaise and chopped coriander leaves.

Cooking Tips:

1. Soak the bamboo skewers in water for a few minutes to prevent it from burning while cooking.

2. This can also be prepared in the oven by cooking at 200 degrees celsius until it turns golden brown. Brush with melted butter every 10 minutes while cooking.

3. Take care to not cut the potato spiral in between. Be careful with your fingers as the potato could slip.
