You can also make this easily as a nice snack or even lunch. Place the slices of sweet potato and place them in a toaster on your regular setting
Sweet Potato Appetizer Recipe
Ingredients:
1 or more sweet potato 2 to 2 ½ inches in diameter
Avocado, mashed and salted to taste
Bacon, cooked and crumbled
Cream cheese, softened
Crushed pineapple, drained
Parsley, chopped
Prosciutto, cut into 1 inch by 4 inch strips rolled up.
Cheddar cheese or blend, grated
Directions:
Preheat oven to 375 degree F.
Peel the sweet potato and then slice it into ⅛ inch thick coins. Place the coins on a baking sheet lined with parchment paper.
Space out the coins onto the cookie sheet so they are not touching each other. Place these in the oven for 10 minutes and then turn them over.
Put them back into the oven for another 8 to 10 minutes or until the coins are soft when pierced with a fork.
Let these cool for 5 minutes and then they are ready to be topped with any ingredients you like.
My first variation is to top these with the mashed avocado and bacon.
You can top them with cream cheese and crushed pineapple with a sprinkle of chopped parsley.
My last suggestion is cream cheese with a piece of prosciutto and then topped with grated cheddar cheese. Place these back in the oven under the broiler with the pan low in the oven so as to not overcook the sweet potato.
Take them out of the oven when the cheese is melted and bubbly.
These can be served warm or cold.
