Crockpot Chicken & Stuffing

Crockpot Chicken & Stuffing is an easy, slow cooker supper that is filled with the flavors of Thanksgiving, but simple enough to make year round!

Crockpot Chicken & Stuffing
2 large chicken breasts (about 1.5-2 lbs. total)
salt & pepper
1 6 oz. box chicken flavored stuffing mix
1-10 oz. can condensed cream of chicken soup
1 c. sour cream
½ c. water
1 bag frozen green beans
1.5-2 c. chicken broth

Spray the inside of the crockpot well with baking spray. Place the chicken breasts into the crockpot. Season to taste with salt and pepper. Sprinkle the stuffing mix over top. In a medium mixing bowl, stir together the cream of chicken soup, sour cream, and water until thoroughly combined. Pour this sauce evenly over the surface of the chicken and stuffing. Sprinkle the green beans all over the top. Pour about 1.5-2 cups of chicken broth over top. Cover and cook on HIGH for 4 hours. Remove the chicken and shred (removing any excess fat as you go). Return the chicken to the crockpot and stir everything together. Serve with rice or mashed potatoes. ENJOY!
