Ep, 397: Pumpkin Spice Oatmeal | Breakfast and Brunch Recipes 🎃

Today’s Recipe I am a yummy Breakfast that would be perfect on a Cozy Fall Morning and for a Fall Brunch, Pumpkin Spice Oatmeal!!

Delicious, Comforting, and full of Pumpkin Flavor; when you taste this, it will remind you of eating a slice of Pumpkin Pie!! This will definitely warm up the Soul!!!

1 1/4 cups evaporated milk
1/2 cup pumpkin purée (not pumpkin pie mix)
1/2 tbsp packed light brown sugar
1/4 tsp pumpkin pie spice
1/8 tsp (Pinch) salt
1/2 cup old fashioned or quick 5-minute oatmeal
1/2 tsp pure vanilla extract

1/2 cup chopped pecans and sprinkle of brown sugar, for garnish

Cook’s Note: If using the Quick 5-minute Oatmeal, it will cook a lot faster then the Old Fashioned Oatmeal.

In a medium saucepan over medium-high heat, add evaporated milk, pumpkin purée, brown sugar, pumpkin pie spice, and salt; whisk or stir together until well incorporated. Heat it up for about 5 minutes until hot but not bubbling. Next add the oatmeal and stir until well combined; continue heating for another 5 minutes. Then turn the heat up to high and let it cook for 2 minutes until it thickens (If you like your oatmeal runny, give it a stir and then remove from the heat). After 2 minutes, remove from the heat and add and stir in vanilla extract. Pour oatmeal into a bowl, sprinkle with brown sugar and chopped pecans, serve and enjoy!
