Ep. 389: Chocolate Chip Pancakes | Breakfast and Brunch Recipes 🥞🍫

Today I am making a great Pancake Recipe that would be great for Breakfast anytime of the week, your upcoming Sunday or Holiday Brunch, Chocolate Chip Pancakes!!

These are Super Light, Fluffy, and packed with Chocolate Chips; everyone will enjoy and fall in love with this Recipe and fun to make with your Kids!!

Dry Ingredients

1 1/4 cups self rising or all purpose flour
3 tbsp white sugar
2 tsp baking powder and 1/4 tsp salt (if using all purpose flour)

Wet Ingredients

1 cup evaporated milk
2 extra large or jumbo eggs, room temperature and separated
3 tbsp unsalted butter, melted and cooled
1 tsp pure vanilla extract
1/2 cup chocolate chips (semisweet, milk, dark, white, or mini)

Butter, Maple Syrup and Chocolate Chips, for garnish

In a large bowl with hand mixer or stand mixer with whip attachment, add egg whites and whip on high speed until it reaches stiff white peaks; set aside.

In a measuring cup, add evaporated milk, egg yolks, melted butter, and vanilla; whisk until well incorporated. Set aside.

In a large bowl, add flour, sugar, (baking powder and salt, if using); whisk or stir until well combined. Make a well in the center of the dry ingredients and add the wet ingredients; whisk until smooth. Gently add and fold in the egg whites into the batter. Then add and fold in the chocolate chips.

Preheat Griddle to 350 Degrees or heat a large pan over medium heat, spray with cooking spray or butter.

Ladle about 1/4 or 1/2 cup batter for each pancake onto the griddle or pan. Cook pancakes on both sides for about 3-4 minutes or until tops are covered with bubbles and the edges are brown and cooked. Turn and cook on the other side. Serve with butter, maple syrup, and chocolate chips and enjoy!
