Lady’s Finger Bites

Servings – 2 – 3

INGREDIENTS
Okra – 300 grams
Salt – 1 teaspoon
Paprika – 1 teaspoon
Turmeric – 1/2 teaspoon
Chaat masala – 1 1/2 teaspoons
Garam masala – 1 teaspoon
Cumin powder – 1 teaspoon
All purpose flour – 150 grams
Salt – 1/2 teaspoon
Black pepper – 1/2 teaspoon
Water – 260 milliliters
Corn flour – 1 tablespoon
All purpose flour – 1 tablespoon
Bread crumbs – for coating
Oil – for frying
Coriander – 20 grams
Mint – 15 grams
Onions – 100 grams
Green chili – 2 tablespoons
Pomegranate – 100 grams
Tamarind pulp – 60 milliliters
Jaggery powder – 30 grams
Salt – 1 teaspoon

PREPARATION
1. In a mixing bowl, add 300 grams okra, 1 teaspoon salt, 1 teaspoon paprika, 1/2 teaspoon turmeric, 1 1/2 teaspoons chaat masala, 1 teaspoon garam masala, 1 teaspoon cumin powder and mix it well.
2. Marinate for 10 – 12 minutes.
3. In a another bowl, add 150 grams all purpose flour, 1/2 teaspoon salt, 1/2 teaspoon black pepper and mix it well.
4. Add 260 milliliters water and mix it well to make a thick batter.
5. Take the marinated okra, 1 tablespoon corn flour, 1 tablespoon all purpose flour and mix it well.
6. Dip it in the prepared mixture and then roll it in bread crumbs properly.
7. Heat sufficient oil in a deep fryer and deep fry these until golden brown and crispy.
8. Drain it on an absorbent paper.
9. In a blender, add 20 grams coriander, 15 grams mint, 100 grams onions, 2 tablespoons green chili, 100 grams pomegranate, 60 milliliters tamarind pulp, 30 grams jaggery powder, 1 teaspoon salt and blend it into a puree.
10. Serve with prepared lady’s finger bites.

Paneer Cheese Bites

Servings – 2 – 3

INGREDIENTS
Chilli flakes – 1/4 teaspoon
Oregano – 1/4 teaspoon
Dried parsley – 1/8 teaspoon
Dried basil – 1/8 teaspoon
Dried thyme – 1/8 teaspoon
Paneer – 220 grams
Ginger paste – 1 teaspoon
Salt – 1/4 teaspoon
Black pepper – 1/4 teaspoon
All purpose flour – 100 grams
Corn flour – 2 tablespoons
Salt – 1/4 teaspoon
Black pepper – 1/4 teaspoon
Water – 250 milliliters
Bread crumbs – 80 grams
Coriander – 10 grams
Oil – 1 tablespoon
Onions – 35 grams
Bell pepper – 70 grams
Carrots – 60 grams
Green beans – 60 grams
Salt – 1/4 teaspoon
Black pepper – 1/4 teaspoon
Cheese slices
Oil – for frying

PREPARATION
1. In a bowl, add 1/4 teaspoon chilli flakes, 1/4 teaspoon oregano, 1/8 teaspoon dried parsley, 1/8 teaspoon dried basil, 1/8 teaspoon dried thyme and mix it well.
2. In a mixing bowl, add 220 grams paneer, 1 teaspoon ginger paste, 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
3. In a another bowl, add 100 grams all purpose flour, 2 tablespoons corn flour, 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
4. Add 250 milliliters water and mix it well to make a thick batter.
5. In a bowl, add 80 grams bread crumbs, 10 grams coriander and mix it well.
6. Heat 1 tablespoon oil in a pan, add 35 grams onions and fry till translucent or until it turns golden brown in color.
7. Then, add 70 grams bell pepper, 60 grams carrots, 60 grams green beans and mix it well.
8. Cook for 8 – 10 minutes on medium heat.
9. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
10. Cook for another 3 – 5 minutes on medium heat.
11. Take the paneer slice and add a cheese slice on top of it.
12. Add some prepared mixture on it.
13. Add a another cheese slice on top of it.
14. Cover it with another slice of paneer.
15. Dip it in prepared batter and then roll it in bread crumbs mixture properly.
16. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
17. Drain it on an absorbent paper.
18. Serve hot.
