Ingredients:
8 oz boneles skinless chicken breasts (thighs will add a few points)
1 cup carrots
1 cup frozen peas
1 cup chopped potatoes
1/2 cup celery
1 small/medium onion
1 Tbsp chicken base (I used no sodium version)
1 cup water
1 tsp minced garlic
1/2 cup 98% fat free condensed cream of chicken soup
4 oz fat free cream cheese
2 tsp garlic powder, onion powder, salt, parsley
1 tsp pepper
1/8 tsp thyme
1 package reduced fat crescent rolls
Place Instant Pot on saute – add vegetables and minced garlic
add 1 cup chicken base (1 Tbsp chicken base in 1 cup hot water)
Lock lid and seal vent
Pressure cook 2-4 minutes
Quick release pressure
Add shredded chicken, spices, soup, and cream cheese
Stir until combined and add seasoning to your liking
Serve with reduced fat crescent rolls
Makes 4 cups (1 cup per serving)
3 points per cup and 6 points with 1 crescent roll
2 points without the butter and 5 points with 1 crescent roll
