You’re going to love Instant Pot Cafe Rio chicken and Cafe Rio cilantro lime rice! They are super fast and easy to make in the Instant Pot. I like to serve the rice and chicken over shredded lettuce, black beans and then drizzled with Cafe Rio dressing.

For Cafe Rio rice I prefer to use parboiled rice. You can also use long grian white rice. What is parboiled rice? Don’t confuse parboiled rice with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice.

Yield: 12 servings

INGREDIENTS
1 Tbsp butter
1 yellow onion, diced
2 garlic cloves, minced
4 cups water
2 2/3 cup white rice or parboiled rice
1 Tbsp chicken bouillon
1 tsp cumin
1 (4 oz) can green chiles
1/2 bunch cilantro, chopped
1 Tbsp fresh lime juice
1/4 tsp salt

INSTRUCTIONS
Press the sauté function on your Instant Pot. Melt the butter and then add in the onion. Cook until translucent. Add in the garlic and cook for about 30 seconds. Add in the water, rice, bouillon, cumin, green chiles, cilantro, lime juice and salt.
Turn off the sauté function. Cover the pot and turn it to manual. Press the timer to 8 minutes for short grain white rice or 3 minutes for long grain white rice. Make sure the valve is set to “sealing.” When the timer beeps let the pot sit for about 5 minutes.
Turn the valve gently to “venting.” If any foam comes out then turn the valve back to sealing and try again in a minute to release the pressure. Once pressure is released remove the lid and stir a bit and then serve.

Yield: Makes 8 servings

INGREDIENTS
1/2 cup Italian dressing
2 1/2 lbs of boneless, skinless chicken breasts and/or thighs (frozen is okay)
1/2 Tbsp chili powder
1/2 Tbsp cumin
1/2 Tbsp garlic powder
1/2 tsp kosher salt

INSTRUCTIONS
Add the Italian dressing and the chicken broth to the pot. Add in the rest of the ingredients. Cover the pot and turn the valve to “sealing.” Push manual and adjust the time to 12-17 minutes (more time for thicker breasts or frozen meat).
When the pressure cooker beeps let the pressure release naturally for 5-10 minutes and then remove the lid.
Transfer the chicken to a cutting board and shred and then add the chicken back into juices inside the Instant Pot. Stir and then serve the chicken. You may need to salt and pepper to taste.
